tuscan artichoke pasta

This pasta recipe is a pantry-only version of the first dish I ever served at a dinner party. It’s rich and hearty, loaded with umami and pairs beautifully with Pinot. A good Pinot almost always includes an element of earthiness, accentuated by the mushrooms in the pasta. Sun-dried tomatoes bring a hint of tang and sweetness. It also makes great lunch leftovers!
